    Once the 2013 vintage had been adequately rested they selected 60 bottles to riddle.  At this stage we could finish the wine to our preference.  We tasted over 40 different fortified wines narrowing our selection down to the unique flavours of Madeira.  This involved the addition of a blend of grape sugar syrup & the fortified wine added in a careful ratio with the wine.  Once we agreed on the style of the Madeira we then continued further samplings to find our perfect flavour profile with food offering.

    To complete our first bottling we chose a 1999 Sercial Madeira from the D’Oliveiras family
    This special Madeira from the D’Oliveiras family, which after six weeks of resting has integrated to a fine, & complex glass that compliments a full dining experience.

    The base sparkling wine is made exclusively from Seyval Blanc grapes, and only from the finest press cuts. After an extended cold settle, the base wine was fermented at cool temperatures to maintain freshness, which is still present after its secondary fermentation in the bottle.
